JOB DESCRIPTION:
Lockhart Smokehouse Pit Master is responsible for supporting the mission, vision and values of Lockhart Smokehouse through all that he/she does in their role every day. The Pit Master will work towards accomplishing stated goals and objectives to achieve desired results while focusing on the quality of food, developing and training all restaurant staff, keeping an eye on food costs, and helping long- term profitability of the company.
· Ensure that the restaurant equipment is kept in satisfactory working order maintaining the highest degree of usability and cleanliness.
· Ensure company standards in product and restaurant specifications.
· Supervise food handling procedures and operational processes.
· Ensure safe working conditions as required by OSHA and federal, state and local governing bodies.
· Manage Food Ordering or Designate and Oversee Implementation
· Mastery of all Pit Operations and Quirks- for example knowing how often and to what degree to rotate meat
· Regularly counsel and coach hourly employees to make sure we maintain consistency of all products at all locations
· Entrusted with decision-making authority to suspend employees pending review of the situation by the Director of Operations, and to discharge an employee immediately for instances of serious misconduct.
· Be available to work at any of the Lockhart locations as business needs require
· Be available for Lockhart functions/ promotional events as required
· Be available in case of emergency
· Responsible for other duties as assigned
GENERAL REQUIREMENTS:
- Related experience in dining/BBQ/Culinary arts in a supervisory position
- Passion and knowledge about BBQ principles
- Ability to lift 55 pounds and work on feet for long periods of time
- Must be available to work weekends, holidays, and evening events
- Must be a motivating team player who can work efficiently in high volume situations
- Must have a high level of organizational skills, attention to detail and understanding of leadership
- Must hold a valid food manager certification
- Must hold a valid driver's license with clean driving record
