THE ROLE

The Director of F&B has a significant role in the successful operation of Winstar. The position is charged with the oversight of successful food & beverage and catering event operations. The F&B Director will have a tremendous amount of interaction and personal involvement with guests and clients, and as such must always represent Legends Hospitality in a professional, gracious, and knowledgeable manner.


ESSENTIAL FUNCTIONS

  • Direct the activities of all food & beverage, and catered events = client, managers, supervisors, and department personnel as required; evaluate performance, coordinate scheduling to provide adequate staffing, instruct employees on policies, procedures, duties, and activities; handle disciplinary matters.
  • Monitor and evaluate department to ensure the proper planning for short and long-term strategies; monitor and evaluate performance of special events, food, and beverage to facilitate ongoing improvement of operations and financial return.
  • Coordinating food & beverage menu development, wine lists, and cocktail programs.
  • Coordinate with the Executive Chef, Catering Manager & Event Sales Manager for revisions and updates of the catering menu regularly, reflecting culinary trends and client needs.
  • Review strengths and weaknesses of all food & beverage, and catering operations such as cost of sales, inventory par levels, and general policies and procedures to most effectively implement changes to improve operations and most efficiently allocate resources.
  • Provide efficient service and quality products by maintaining positive customer and client relations through effective communication
  • Establish food & beverage and catering department standards, guidelines, and objectives.
  • Participate on the leadership team that collectively makes key strategic and operational decisions for the observatory.
  • Work with marketing to coordinate food & beverage and retail promotions.
  • Adhere to company standards and service levels to increase sales and minimize costs, including cost of goods, supply, utility, and labor costs
  • Maintain positive client relations and anticipate guest needs and ensure guest service in accordance with Legends’s standards; investigate food quality and service complaints.
  • Analyze and enhance cost control efforts for labor and waste management; initiate continuous improvement in all food & beverage, and catering cost of goods & labor cost controls.
  • Manage Capex budget to coordinate smallware and major equipment purchases
  • Inventory Management to include weekly and monthly beverage and operating inventory tracking and working directly with the Purchasing Manager for supply requisition and delivery schedules
  • Maintain professional restaurant and special event image, including cleanliness of all spaces, proper uniforms, and appearance standards
  • Responsible for ensuring that all financial (invoices, reporting) and HR/Payroll related administrative duties are completed accurately, on time and in accordance with company policies and procedures
  • Supervise general cleaning tasks using standard products as assigned to adhere to health standards.
  • Maintain a favorable working relationship with all company employees to foster and promote a cooperative and harmonious working climate which will be conducive to maximum employee morale, productivity, and efficiency/effectiveness
  • Monitor and ensure cleanliness of dining areas, event space and work areas; communicate issues of safety, cleanliness, or malfunctions to appropriate departments; manage maintenance/safety issues to completion.
  • Follow and encourage your team to follow all safety policies and procedures, including but not limited to looking for and reporting any unsafe work conditions, and complete company-wide safety training and any additional job specific safety training.
  • Report all safety incidents (injuries and illnesses) into the company’s risk management system (Origami Risk) on the same day that the safety incident has been reported to you.
  • Ability to meet local, state, and federal requirements related to food safety and alcohol training

QUALIFICATIONS

To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.

  • Minimum of five years’ experience as a manager in the Food & Beverage Industry.
  • Proven leadership experience and ability to develop teams in a Premium environment.
  • P&L Experience including analytics, reporting and financial planning.
  • Experience working in a high-volume luxury property, preferred
  • ServSafe Certificate, preferred
