Elaine’s brings Egyptian Alexandrian dishes to Old Town. Alexandrian cuisine is an amalgamation of Greek, Italian, Lebanese and French cuisines with a flare. Job Summary

The Chef is responsible for all aspects of the kitchen such as menu plans, operations, recipes, financial responsibility, portion and inventory control, food quality, and employee supervision. The Chef provides leadership training and hands-on management of the kitchen staff. The Chef is in charge of executing the food in the main kitchen, drives menu design and kitchen creativity and is responsible for growing and developing the product and profitability of the food service program. The Chef provides a consistent product and experience achieving revenue targets and managing costs as well as ensuring all staff under direct supervision are focused and demonstrating a “Guest Centric” attitude and culture. In addition to maintaining our vision by adhering to our values and management principles, these positions must provide the highest level of service to our guests.

Responsibilities and Duties

  • In charge of all the ordering needs for the BOH.
  • Controlling systems for food cost and waste, making sure BOH stays in line with the budget P&L.
  • Will be the day-to-day contact for vendors when changes need to be made or product needs to be added.
  • Help manage labor cost and percentage so that BOH stays in line with the budget P&L.
  • Oversees a biweekly inventory.
  • Ensure that all food preparation equipment is being used safely and correctly and that it is cleaned and maintained.
  • Ensures that all culinary operations manuals are prepared and updated.
  • Ensures that the Department’s overall operational budgets are strictly adhered too.
  • Ensures that the culinary department adheres to all local health department policies and procedures.
  • Ensures that a consistent first-class product of the highest quality is achieved and maintained in all culinary areas, whilst adhering to operational deadlines.
  • In charge of all Menu development including costing and training.
  • Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to help assure that financial goals are met.

Qualifications and Skills

Previous kitchen experience required. Strong knowledge of cooking methods, kitchen equipment, and best practices. Teamwork-oriented with outstanding leadership abilities. Excellent communication and interpersonal skills.

Pay: $55,000.00 - $68,000.00 per year
