JOB OVERVIEW – This position is assigned to the MCE Food Factory Director under Montana Correctional Enterprises (MCE). This person enforces compliance with Institutional & USDA guidelines, hires, supervises and trains inmate workforce. Develops and maintains MCE Bakery inventory system, is responsible for the receiving, preparation and delivery of all bakery goods for meals to multiple institutions.


QUALIFICATIONS - This position requires considerable knowledge of modern principles, practices, procedures and chemistry used in large scale baking and food production techniques. This position requires proficiency in the operation, maintenance and sanitation of highly technical commercial food service equipment usually obtained by successful completion of a Master bakery course and or a apprenticeship under a Master baker and two years’ experience as a Master Baker. This also requires necessary skills to supervise, train, and evaluate a diverse inmate staff. Must have highly developed organizational skills. Must successfully complete the 40 Servesafe Manager correspondence course within the six-month probationary period. Successful candidate also needs to have a high school diploma or GED.
