POSITION SUMMARY:

The Union Club is committed to delivering 5 star food to their discerning and well-traveled membership by utilizing both cutting edge and proven traditional culinary techniques.
ESSENTIAL JOB FUNCTIONS:
- Fabricating and proper portioning of various meat and seafood
- Assisting in menu development of an ever changing menu
- Creating a daily dinner special
- Have extensive knowledge and able to work all kitchen stations for a la carte service
- Help prepare and cook for banquets
- Help with inventory and controlling inventory
- Maintain communication and team atmosphere with the FOH
REQUIRED QUALIFICATIONS:
- A strong culinary background with knowledge and experience in modern cooking techniques as well as classical cooking
- Must be able to take directions from the Executive Chef and Sous Chef, must be creative and inspired with food
- Organizational skills. Must be able to plan ahead and stay organized in order to maintain a cohesive culinary service
- High volume banquet experience
- An eye for detail
- Must be flexible with your schedule
- A great and positive attitude with integrity. Must be committed to the work that needs to be done while carrying positive attitude to set the tone of the other staff.
Knowledge, Skills, Abilities and Personal Characteristics
- Knife skills, Basic culinary terms and product identification.
- Be able to deal with last second changes and be flexible.
Education, Training and/or Experience
- High school diploma or GED
- Minimum 2 years fine dining experience.
- Culinary degree preferred
