The primary responsibility of the Lead Cook is to prepare food of the highest quality and taste for the residents and guests of the Community, ensuring that the food presentation enhances the dining experience of the residents and guests. Cleanliness of all the Dining Services (DS) areas and the Dining Service equipment is of utmost importance. The Lead Cook will assist the Dining Services Director (DSD) in managing the operation of the DS department to include staffing, food ordering, preparation, menu planning, food delivery and sanitation in accordance with appropriate industry and health department regulations. A key responsibility is to assist in maintaining a positive physical and social environment for the residents. The main objective is to ensure that dining is the highlight of the resident’s day.
Areas of Responsibility
- Prepare delicious and attractive food that is colorful and tastefully presented, making each meal service an exceptional occasion.
- Supervise and/or assist in the proper washing of all dishes, cookware, flatware, and utensils.
- Properly maintain all kitchen equipment.
- Monitor water, food, refrigerator, and freezer temperatures and/or chemical compounds as appropriate to ensure the prevention of food borne illness and the spread of communicable disease.
- Maintain kitchen and food preparation areas in a clean and sanitary manner.
- Approach residents and associates in a friendly, service-oriented manner.
- Assist in scheduling, supervising, and training the DS associates in day-to-day DS operations. Assist in making job assignments and setting priorities.
- Prepare high quality meals consistent with local customs and tastes. Consistently adhere to the standard recipes, posted approved menus, budgeted costs, and Company policies.
- Be aware of the flow and timing as the food is dished up from the serving line and make corrections as needed.
- Ensure that the menu is followed, and meals are prepared according to the approved recipes while maintaining the appropriate portion control. Ensure food is prepared in a nutritional, appetizing fashion, and presented in an attractive manner.
- Assist the Cooks in maintaining the appropriate resident diets and noting on the substitution form any changes to the menus including maintaining required menu substitution file as required by state regulations.
- Assist the DSD in maintaining adequate supplies, food, and bottled drinking water to fulfill emergency requirements of local and state authorities.
- Assist in maintaining a clean and orderly kitchen and storage areas that successfully meet or exceed all state and local health requirements.
- Ensure that all food supplies and other goods are properly stored, labeled, dated and accounted for.
- Prepare for the next day, sort leftovers, pull foods from the freezer and walk-ins.
- Other duties as assigned.
Requirements/Certifications:
- Must be a minimum of 18 years of age.
- High school diploma or equivalent.
- Minimum of three (3) year food service (or related field) preferred.
- Must have state specific Food Manager Certification or be able to certify within 30 days of hire.
- Some software and computer skills preferred.
- Must have a positive Criminal Background Screening.
