Position Title: Executive Sous Chef

Overview: Responsible for overall service and preparation aspects of the dining service operations as directed. Responsible for maintaining high standards in service, food preparation, resident relations, costs, staff, safety, sanitation, training, and special functions campus wide. Reports to The Executive Chef.

Essential Job Functions:

  • Ensures a positive and enjoyable dining experience and carefully follows established procedures for merchandising, plate presentation, and service
  • Oversees and is responsible for daily maintenance of the food preparation system, recipe file, inventory and storerooms. Fills in when necessary on special events or when short staffed
  • Keeps current with trends in food preparation, including new recipes, presentation and merchandising techniques.
  • Supervises cooking personnel and insures proper sanitation procedures for the entire kitchen area.
  • Ensures daily production meetings are being held in all venues.
  • Helps create and maintain state mandated standards in assisted living dining program
  • Assists with hiring, orienting, training, evaluating, and counseling of staff
  • Participates, with the management staff and production staff, in the writing of menus.
  • Circulates the dining area during meal periods to field resident / guest comments pertaining to service and food quality
  • Check deliveries and inventories
  • Implements programs planned to provide quality food and service to the residents, guests and staff, thus enhancing the desirability of the community to current and future residents.
  • Observe food preparation and sanitation in all areas
  • Coordinate / implement special events as directed
  • Participates in budget formation when needed
  • Manages culinary staff in regards to performance management, disciplinary action, timekeeping & schedule approvals.
  • Ability to work flexible hours including some weekends and holidays
  • Maintain clean and professional appearance
  • Adheres to company policies and procedures
  • Attend departmental education and all required in-service training/education
  • Maintain confidentiality of resident/family and facility information
  • Respond to all fire alarms and assist in the evacuation of residents when needed
  • Cooperate with staff of other departments when needed
  • Represent the organization through professional demeanor and attitude
  • Provide quality customer service in all interactions with residents, guests and staff
  • Perform other duties as required

You Have:

  • 5 years or more experience managing high volume food service establishments that includes fine dining and formal dining
  • Prior culinary management of multi-venue kitchens preferred
  • Culinary degree or equivalent food service management experience required
  • High school diploma or equivalent preferred
  • ServSafe Certified
