JOB OVERVIEW:

The Executive Chef will be tasked with assisting in the development of the hotel’s restaurant concept and menus prior to hotel opening. They will be responsible for providing oversight and direction to kitchen associates, ensuring quality in food production, establishing and maintaining food safety and sanitation standards, control of inventory, and maintaining food & labor costs.

ESSENTIAL JOB FUNCTIONS:

  • Supervise kitchen associates to provide exceptional quality in food production
  • Maintain knowledge of and ensure associate compliance with all hotel policies
  • Interview, train, and council (where appropriate) kitchen associates
  • Conduct performance reviews on kitchen associates
  • Ensure appropriate inventory of supplies needed for associates to effectively do their jobs
  • Review banquet event orders
  • Develop and maintain system to ensure items are received and properly stored
  • Develop and maintain cleaning schedule for the kitchen that meets all hotel, corporate, and health standards
  • Ensure associates report to work as scheduled and maintain documented records for those that do not comply
  • Ensure all recipe cards, production schedules and plating guidelines are posted and followed
  • Conduct frequent walk throughs of the kitchen and correct any deficient items to ensure quality and details are being maintained
  • Develop restaurant concept and menu
  • Assist Sales & Catering associates with developing special menu items for clients.
  • Meet with clients when necessary with professionalism
  • Prepare weekly kitchen work schedules in accordance with forecasted labor costs. Adjust when necessary

MINNIMUM REQUIREMENTS:

We are looking for an Executive Chef who has wide-ranging experience and a focus on flavor development and the fusion of diverse cultures using rustic culinary techniques

  • A proven ability to collaborate on menu, staff, and business development
  • Creativity paired with consistent quality
  • Verbal & Written Communication skills
  • 2 years prior experience in Executive Chef role with a focus on team development
  • Knowledge of all federal, state, and local laws/regulations pertaining to food safety and food production
  • Willingness to work a flexible schedule including nights, weekends, and holidays
  • Ability to thrive under time constraints, stress
  • Ability to be on your feet walking continuously
  • Ability to grasp, push, pull, lift or carry up to a 100lbs with or without reasonable accommodation
