Baker Trainee Job Duties
· Reading and comprehension skills are necessary. Recipes, mixing and baking procedures, safety rules and procedures, cleaning procedures, equipment operating procedures, company notices and policies, and maintenance instructions are a few examples of documents that must be read and understood.
· Mathematical skills are needed. Addition, subtraction, multiplication and division skills are used. The baker must understand fractions and decimals. Ratios and percents must be understood. Liquid and solid units of measure (volume and mass) must be understood.
· Communication skills are important. You must be willing and able to speak and listen to personnel from all departments. You will be required to call coworkers on the telephone to ask questions, to explain situations, and to get fill-in help if a person reports off for production or packing work. Additionally, you will have to leave detailed written messages for coworkers. You will also have to fill out various production-related forms on a daily basis.
- Must be willing to work all three shifts.
· May be required to come in early to start up equipment and may be required to stay after normal end of shift to shut down equipment and wash and clean equipment and work area.
· When a baker must make a production changeover during his shift, he is expected to adequately wash the equipment, containers, work areas, etc. that are being taken out of service during the bakers normal shift hours as well as continue to bake.
· Help repair equipment when it breaks down.
· Adhere to daily and monthly cleaning schedules. This cleaning is to be done during normal shift hours.
· Bakers are expected to light ovens and take up bearings as ovens heat up. Baker may be required to be on a calling list to come to plant to relight ovens in case of power failure.
· Bakers must be adaptable and proficient. The baking job involves manual physical work and an understanding and ability to use high-tech computerized equipment.
· Bakers must be willing to be trained by other bakers, supervisors, managers, owners, or outside contractors as determined by management. Training may take place on shifts other than the shift the baker may have been assigned to. Training may take place all days of the week.
· Preference for fork-lift certification. However, on-the-job training will also be provided.
· Bakers prepare, measure, and weigh ingredients. Ingredients are mixed. Some dough is stored in containers for aging and later use. Dough is placed in extruders. Pretzels are extruded, proofed, cooked, baked, and dried. Bakers perform all responsibilities related with these processes.
· Bakers use their senses of sight (including color vision and depth perception), smell, taste, hearing, and touch to perform quality checks on ingredients, dough, pretzels in process, and finished pretzels.
· Bakers must be accustomed to and be able to walk, sit, stand, bend, stoop, crouch, kneel, crawl, twist, and climb. Reaching with arms and hands is necessary. Lifting is done on a regular basis. Bakers frequently lift up to 50 pounds. Lifting and moving weight of up to 100 pounds occurs daily.
· The baker must be able to work in extremely hot and humid areas. To perform the baker’s responsibilities, the baker works in average temperatures from 78 degrees F. to 120 degrees F. Different rooms that a baker works in will have flour dust, salt, and pretzels dust, caustic and soda ash dust, and greasing vapors. Noise levels vary.
· Bakers must check all equipment settings, burners, alarms, etc., to see that they are operational and correct for the product that is being baked and packed.
· Maintain all appropriate food safety regulations.
· Assist in any other way requested by management.

Pay: $15.19 - $18.30 per hour
